The cuisine of Cilento
All the dishes served at the lodges of the Parmenideum are traditional plates from the Cilento area. This diet is a Mediterranean diet, which was first studied in modern times by Professor Ancel Keys (an American dietician). The meals are home prepared by local chefs and sometimes the lady of the house, and offer home made bread made in an outdoor wood baking oven. |
At an agriturismo many of the foods served are home grown or reared and made in-house, such as meats, salamis, cheeses, wines, fruits & vegetables, pasta and grains and of course olive-wood baked bread |

Many of the agriturismo we host encounters at offer cakes, sweets, jam and liquor made in house. These items and the processes of making them have been passed down through the generations.
Examples of some local products which are used in the dishes prepared at the various agriturismo: local olive oil, Cilentan chickpeas, buffalo mozzarella (found only in this region in the world), salami, home made pasta, local wine and free range meat.
There is always an abundance of good, locally produced wine, salami and other cured meats and cheeses at the encounters.

The region of Cilento is famous for the longevity of it's inhabitants, most of whom live well into their 90's and many into the 100's. Red hot chillies probably play no small part in this.
